Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan with butter or line it with parchment paper.
- In a large bowl, mix together the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt until well combined.
- In a separate bowl, combine the melted butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Gently fold in the chocolate chips until evenly distributed.
- Spread the mixture evenly in the prepared baking pan, pressing down lightly to ensure even baking.
- Sprinkle a pinch of sea salt on top before baking.
Baking
- Bake for 20-25 minutes, or until the edges are golden brown and the center is set but still slightly soft.
- Allow the bars to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before cutting.
Notes
For the best texture, avoid overbaking. Serve warm with ice cream for a treat, and store in an airtight container at room temperature for up to five days.
