  • 1 cup unsalted butter, softened Use room temperature butter for best texture.
  • 1 cup brown sugar Light brown sugar recommended for moisture.
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature eggs yield better results.
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Use semi-sweet or dark chocolate chips.
  • 1 cup mini marshmallows Look for fresh mini marshmallows.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the creamed mixture until just combined.
  6. Fold in chocolate chips and mini marshmallows until evenly distributed.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until edges are golden.
  2. Allow cookies to cool on baking sheets for a few minutes before transferring them to wire racks.

Notes

Use dark chocolate chips for a richer flavor. For added texture, sprinkle sea salt on top before baking. Store leftovers in an airtight container or freeze them for up to three months.
