Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the eggs and vegetable oil, whisking until well blended.
- Gradually blend in the gluten-free chocolate cake mix, stirring until a thick batter forms.
- If desired, fold in chocolate chips or nuts.
- Using a cookie scoop or tablespoon, place dollops of dough on a lined baking sheet, spacing about 2 inches apart.
Baking
- Place the baking sheet in the oven and bake for 9-11 minutes until the edges are set and centers are soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, do not overbake. Chill dough for thicker cookies. Consider adding a pinch of sea salt for enhanced flavor.
