Preparation
  1. In a food processor, combine the Medjool dates, pumpkin puree, cocoa powder, and vanilla extract. Blend until the mixture is smooth and well incorporated.
  2. If you're adding nuts, pulse the mixture a few times to break them down into smaller pieces, while still retaining some texture.
  3. Taste the mixture, and if desired, sprinkle in a pinch of salt to elevate the flavors.
  4. With clean hands, scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter.
  5. If you’d like additional texture, roll some of the balls in shredded coconut until coated.
  6. Arrange the chocolate date balls on a baking sheet or plate.
  7. Refrigerate them for at least 30 minutes to allow them to set and firm up.

Notes

Ensure your dates are soft and moist for a smoother mixture. If they feel dry, soak them in warm water for about 10 minutes before using. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
